One of my all-time favorite snacks is popcorn, cooked the old-fashioned way (i.e., on the stove) with coconut oil, and then sprinkled with super-fake (and super awesome!) white-cheddar topping... yep, the kind they have at the movie theaters. I'm not proud. But I'm not-not-proud enough to post it here. :)
And I had this can of organic chickpeas - which is something I tend to have on-hand because they're so versatile and delicious (anybody remember these Spicy Lime Chickpeas?!)... and thought... can I turn my chickpeas into my awesome popcorn snack?!
I thought perhaps, yes. So I made these Roasted White Cheddar "Popcorn" Chickpeas with Coconut Oil. Soooo easy. Sooo simple. Especially if, like me, you're working from out of a can (although you could grow them from the garden!). All you need is: Chickpeas. Coconut Oil. Salt. And this crazy-fantastic-fake-cheddar-cheese. It's ok, everything else in it is good for you. :)
This is the kind of snack you pull out when you have adult friends coming over for a casual game of cards. Or, for a great appetizer when the kids are busy with something else. (Don't get me wrong - the kids will like these! But you won't want to share with them.) It's way more chic than popcorn, and even boasts some health benefits (great source of protein, good source of fiber...). And I haven't even gotten started about how awesome coconut oil is! (Here is a

So I am feeling kind of clever, and I'm feeling very full - since I ate that whole can myself. Meep. I CANNOT STOP MYSELF AROUND FAKE CHEESE STUFF. One of my many weaknesses.

In other news, the Olympics ended before I had the chance to do another Olympic-themed snack. So much for Sliders (That Add Weight To Your) SKELETON, and SLOPESTYLE (Which Is As Hot As) Salsa, and DOWNHILL (Skiing) Dips!... Maybe next year? Hmmm.
- 1 can (or 1 cup) chickpeas, drained and patted dry with a towel
- 1 tablespoon coconut oil
- 1 tablespoon white cheddar popcorn seasoning
- salt (to taste)
- Heat oven to 375 degrees. Cover cookie sheet with aluminum foil and set aside.
- Rinse and drain chickpeas, and pat dry in a towel. Set aside in a bowl.
- Heat up 1 large heaping tablespoon of coconut oil in saucepan. Let cool slightly, then pour over chickpeas.
- Sprinkle cheddar cheese and mix together so that chickpeas are covered in cheese. Pour chickpeas onto cookie sheet, and sprinkle with salt. Roast in oven for about 25 minutes.
